Ingredients



  • 1/4 cup bacon grease
  • 2 cups chopped or shredded cooked beef, pork, or chicken
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 medium tomatoes, chopped

  • 1 large boiled potato, peeled and diced

  • 12 flour tortillas (12-inch), warmed
  • Vegetable oil (for frying)

Directions




Step 1 — Prepare the Filling



Heat bacon grease in a skillet over medium heat. Add the meat, diced onion, minced garlic, chopped tomatoes, green chiles, and diced potato. Cook until the onion softens.



Step 2 — Season the Mixture



Stir in salt, oregano, chili powder, and fresh cilantro. Let the mixture simmer for 2–3 minutes to enhance the flavors.



Step 3 — Fill the Tortillas
